Crispy, Fluffy Homemade Waffles Recipe

I love waffles, especially those that are crispy on the outside and fluffy on the inside. So far, my favourite waffle places are at Inside Scoop, and of course A&W. Since I love waffles, theMister bought me a waffle maker last Christmas! What an awesome guy, hehe.

Although it is a Belgium waffle maker, the waffles that come out depends on your recipe. So far, we have tried two different recipes, and this one is pretty decent. Not as crispy as the ones at the stores, but good enough. Here’s the recipe for it in case you would like to try. It is really easy and can be whipped up quickly.

Recipe Ingredients

  • 100g all-purpose flour
  • 25g corn starch
  • 2 tsp baking powder
  • a pinch of salt
  • 1 egg, yolk and whites separated
  • 1/4 cup vegetable oil
  • 3/4 cup milk
  • 1 tbsp caster sugar, split into two portions
  • 1/2 tsp vanilla essence

Recipe Directions

  1. In a bowl, sift together the flour, baking powder, corn starch and salt.
  2. In a separate bowl, beat the egg yolk, vegetable oil, milk, one portion of sugar and vanilla essence.
  3. Pour the wet ingredients over the dry and mix until combined. Don’t worry if the mixture is a little lumpy.
  4. In a clean bowl, whisk the egg white and one portion of sugar until medium stiff peaks formed.
  5. Fold the whisked egg whites into the batter mixture. This will make the waffles crispier.
  6. When your waffle iron is hot, pour approximately one cup / one ladle of batter onto the centre of waffle iron and use the back of the ladle to spread it out a little. You don’t have to spread to the edge of the waffle iron unless you want the waffle to be big.
  7. Close the lid.
  8. Serve with maple syrup and butter, or fruits, or even ice cream.

** Make 2-3 waffles, depending on the size of iron and amount of batter you pour on the iron.
